White Asparagus
Passionate about agriculture, François Mathio set up in 1984 on a 40-hectare plot to grow maize as part of a cooperative.
This system did not suit him, nor did cereal production, so he put an end to both in 1988. Asparagus production (8 hectares) began in the late 1980s to early 1990s and in 1994, François Mathio founded his company. Between 1994 and 2000, production grew from 30 tonnes of asparagus to 60 tonnes, reaching 90 tonnes by 2005.
They grow several types of asparagus: white-tipped or purple-tipped, of the 1st category (straight and with a tightly closed tip) or of the 2nd category (less refined but just as good!), white or green, which is crunchier.
FARMING WITH CARE
The team harvests the asparagus by hand and cleans it in the field. As soon as it arrives at the sorting room, it is immersed in a tank and cooled to a core temperature of 2°C to preserve its freshness and tenderness.
It is then stored in a cold room at an average temperature of 4°C. After being sorted, calibrated, and packaged, the asparagus is shipped within 24 hours.
THE PROCESS
The team reduce the use of chemicals by using a base of plant extracts, algae, and natural products that boost the plant's immune system. The use of organic fertilisers helps protect the soil and preserve the product's natural flavour.
This gentle form of agriculture is essential for them. Because natural cultivation produces soil that is balanced and holds water, the plants can flourish. As a result, the asparagus has a slightly sweet taste that makes all the difference.
Their consistent approach ensures high-quality produce,
including:
-A specialist technician monitors conditions and assesses
the risk of disease and pest infestations.
-Strengthening the plant’s natural defences through the
use of bio-stimulant products.
-Addressing potential issues by introducing beneficial
insects or applying natural treatments and essential oils.
